Drunken Bananas

The recipe for this decadent treat comes to us from Peter’s mother. Growing up there were always two important ingredients in the house: bananas and vanilla ice cream.

We hope that this Pioppo family favorite recipe will become one of yours, give it a try next time someone asks, “What’s for dessert?”

A note for parents or those who wish to avoid alcohol:

While most of the alcohol should burn off, there will be a bit left in the final product. It’s not much, but if you’re concerned you can plate your child’s serving before adding the rum.

Drunken Bananas

Prep Time: 5 mins
Cook Time: 10 mins
Yields: 4 servings

Ingredients

  • 3 very ripe bananas
  • 1 tbsp vanilla extract
  • 4 tbsp butter
  • 5 tbsp brown sugar
  • 1/3 cup dark rum (optional)
  • 1 tsp salt
  • 1 lemon
  • 1 pint vanilla ice cream

Method

  1. Cut Bananas into ½” thick slices
  2. Heat a pan on medium-low heat with butter, sugar, vanilla, salt and ½ lemon zest until bubbling
  3. Add bananas, raise heat a bit, stirring and coating bananas with mixture
  4. Once bananas begin to brown, raise heat more, add juice of ½ lemon
  5. Pull pan from flame and add rum. Careful now! This is where you remember Peter is a fireman and rum burns, but it can make a great show if you want to impress someone with a little fire show. Step aside and light a match. Now tilt the pan AWAY from you, and bring the match in. It will ignite briefly as you see in our video.
  6. When all the fun and games are over, continue stirring and let it all thicken down until rich and brown.
  7. Add another hit of butter, when it melts, turn off the flame and serve on top of your favorite Vanilla Ice Cream! Ours is Ben & Jerry’s!!!
