Here is a healthy, and tasty meal made from Chicken,Cabbage and Sweet Onions that is sure to surprise guests with the simplicity of ingredients and the complexity of flavors. Best if done on a grill but works beautifully on the stove top.
Whisk together Soy Sauce, Sesame Oil, Rice Wine Vinegar, Lime Juice, Sriracha and Black Pepper
Remove outer leaves of Cabbage and cut into quarters leaving stem on
Cut Onion into 1/2” thick slices
Put on a tray and brush with the mixture. Reserve a little for basting while cooking
Marinate the Chicken Cutlets in remaining mixture for 10 minutes
Grill Cabbage ,Onion and Chicken on medium / hi heat until brown, basting during the process.
Once fully cooked (approx. 15 to 20 minutes) remove and let cool
Cut Chicken,Cabbage and Onion into bite size pieces , mix together in bowl adding a splash of Rice Vinegar , Soy and a nice hit of fresh pepper.
Serve at room temeprature
If you are cooking on a stove top, a cast iron skillet works well. Drizzle a little sesame oil in pan. Cabbage and Onions can be cooked together until nice and brown over medium heat. Be sure you baste them as they cook. Cook Chicken Cutlets seperately but in the same pan until golden brown and baste as well. Follow same procedure for the rest of he recipe.
